1 lb Italian sausage, rolled into 3/4 tsp sized balls
1 T olive oil
1 small diced onion
3 minced garlic cloves
2 diced red bell peppers
1 bay leaf
1/8 tsp red pepper flakes
8 c vegetable or chicken broth
2 15-oz. cans diced tomatoes
1 1/2 c chopped kale
2 c fresh or frozen cheese tortellini
1/4 c chopped fresh basil
salt and pepper to taste

Directions:
In large skillet, brown sausage balls until cooked through, about 5-7 minutes. Drain off grease and place balls on a plate lined with paper towels.

In a large pot, heat olive oil over med-hi heat. Add onion and cook 3-4 minutes; stir in garlic and cook for 2 minutes. Stir in red peppers, bay leaf and red pepper flakes. Cook until peppers are soft, about 3 minutes.

Stir in broth, tomatoes and kale. Add tortellini and cook 7-8 minutes. Stir in fresh basil and season with salt and pepper to taste. Add sausage and heat till warm. Remove bay leaf and serve.
