6 Flour tortillas
1 can Tomato sauce
6 Potatoes, cubed, peeled and boiled
3 Dried red peppers
2 cups Mozzarella cheese
1 Red onion, diced
¼ cup Lemon juice
1 tub Sour cream
Salt and pepper to taste

Directions:
Directions:
Add diced onions to a bowl with the lemon juice, set aside. In a blender combine the tomato sauce and the red peppers, blend well. Pour the red pepper sauce onto a shallow plate. Heat a skillet with a little olive oil on medium heat until hot. Dip a tortilla in the red pepper sauce, coating both sides. Place the tortilla in the pan, cooking on medium for 1-2 minutes. Flip tortilla over, fill half with potato and top with cheese. Season with salt and pepper. Cook only until cheese starts to melt, then fold other half over the filling. Top with the onion mixture and sour cream.
