4 c. all-purpose flour
1/4 c. sugar
1 tsp. kosher salt
2 tsp. baking powder
4 tbsp. cold unsalted butter
2 c. golden raisins or a combo of dried fruits; blueberries, cranberries, etc
1 1/2 c buttermilk
1 large whole egg
1 tsp. baking soda
1 large egg yolk
1 tbsp. heavy cream
2 tbsp. carraway seeds (optional, if you like them)

Preheat oven to 350º. Line a baking sheet with parchment paper.
In a large bowl whisk together flour, sugar, salt, baking powder and carraway seeds until well combined. Using a pastry cutter cut in butter into flour mixture until it resembles coarse meal. Stir in raisins or other dried fruit until evenly distributed.

In small bowl whisk together buttermilk, egg and baking soda until well combined. Pour buttermilk mixture into flour-batter mixture all at once and stir with a fork until all liquid is absorbed and mixture begins to hold together. Using your hands, press the dough into a round dome-shaped loaf about 8" in diameter. Transfer to baking sheet.
In a small bowl whisk together egg yolk and cream. Using a pastry brush, brush the egg wash over the loaf. Using a sharp knife, make an X-shaped slash about 1/2" deep into the top of the loaf.
Bake, rotating halfway through until deep golden brown & cake tester comes out clean. About 60-70 minutes, transfer to wire rack to cool.
