4 oz (1 stick) melted butter
3 cups corn (drained or 4-5 ears cut off the cob)
2 eggs
1 cup sour cream
9 oz Pepper Jack Cheese cut into ½ squares
½ cup Cornmeal
1 (4 oz ) can chopped green chiles
1/8 tsp salt
½ cup grated Parmesan cheese

Directions:
Directions:
Preheat oven to 350. Coat a 2 quart casserole dish with butter.
In a blender or food processor puree 1 cup of the corn with melted butter and eggs.
In a large bowl combine all remaining ingredients including the pureed corn. Mix well and pour into casserole dish. Bake 30 minutes until the pudding looks set, if it’s not golden colored place under the broiler for a few minutes, but watch closely.
Serve as a side dish, Yummy
