Spaghetti with tuna Recipe

Ingredients: 3-4 cans tuna in oil 1 can tomato paste 1 lb spaghetti 1/2 diced onion and 1 clove garlic, crushed salt, pepper & hot pepper flakes if desired

Directions:Add a bit of olive oil to a deep pot to cook onion and garlic slightly. Do not burn. Add the cans of tuna (with or without the oil) to the pot and stir well. Add a touch of salt and black pepper. Cook for about 3 minutes, stirring to mix all the flavours. Add the contents of 1 small can of tomato paste to tuna mixture and stir with a wooden spoon. Add about 3 cups of water to the tuna and mix well. This will make a thin sauce. Allow this to boil for approx. 45 minutes to 1 hour. The thin sauce will thicken as the water boils away. You will end up with a nice thick tomato and tuna sauce. In the meantime, boil 1 lb of spaghetti or spaghettini just to 'al dente'. Do not overcook pasta. When almost ready, keep approx. 1 cup of pasta water in a cup. Drain pasta and throw into the tuna sauce. Mix well. If too thick, slowly add some of the pasta water until it is the consistency that you like. Good with hot chili flakes on top. (Cardinal rule - No cheese with seafood!) |
