You will need a pizzelle maker to make these cookies.

3 eggs at room temperature
3/4 cup sugar
1/2 cup butter melted and cooled
1 tsp vanilla and 1/2 tsp anise seeds if desired
2 tsp baking powder
1 3/4 cups of flour
Sift flour with baking powder

Directions:
Directions:
Plug in the pizzelle iron - do not oil or spray the coating on the pizzelle grills.
In a mixer, beat the 3 eggs with sugar until light coloured (approx. 3-4 minutes)
Add cooled melted butter and mix well
Add vanilla and anise if desired. (lemon or orange flavoring can also be added instead of anise)
With mixer at a slow speed, add flour sifted with baking powder
Mix well until you have a light batter, almost like a pancake batter
*If making chocolate pizzelle, Add 1/4 cup unsweetened cocoa powder and 1 additional egg.

When pizzelle iron is very hot (a green light usually goes on), pour approx. a small amount on each circle and close the lid. The batter will spread and bake. Cook for approx. 1 minute each. If the lid resists opening, it means the batter is not cook. Leave closed for another 30 seconds. Lift lid and remove the 2 pizzelle with tongs.
Repeat until all the batter is used.

I usually double this recipe and freeze some of the pizzelle because they don't last long if I don't hide some in the freezer. As children, Roberto and Sandro used to love two pizzelle stuffed with nutella, which Nonna Rina often made for them. So good!
