½ lb. smoked deli ham, cubed
½ lb. smoked sausage, cut into 1/4” slices
1 large onion chopped
1 large green bell pepper, chopped
1 c. celery chopped
3 cloves minced garlic
1 can (8 oz.) diced tomatoes
1 can (10 oz.) chicken broth
1 c. uncooked white rice
1 tsp. dried thyme
1 tsp. salt
½ tsp. black pepper
¼ tsp. ground red pepper
1 lb. ready to cook shrimp

Heat ham and sausage in 1 tsp. oil about 5 minutes. Remove from skillet & put in casserole pan. Put onion, bell pepper, celery and garlic in skillet used for ham. Cook and stir 3 minutes, add to ham/sausage. Combine tomatoes & juice with rice & Worcestershire, thyme, salt, black pepper & red pepper in skillet. Bring to a boil and simmer 3 minutes, then pour over sausage mixture. Bake 45 minutes at 350º degrees until rice is almost tender. Add shrimp to top for last 10 minutes of baking & serve.
