3# peeled russet potatoes (6-8 med. large)
2 small-medium onions
3 eggs
3-4 T flour
1 tsp salt
1/2 tsp pepper
oil for frying

preheat 225º

grate potatoes and onion on box grater, largest holes into colander in sink
(work in batches to get rid of moisture, pushing down to squeeze out liquid)

pat dry, add rest of ingredients

heat about 1/4- 1/2 inch oil in large skillet, add batter carefully, in large spoonfuls and flatten a bit into pancakes

cook on first side until edges crispy (about 3-5 minutes), then flip and cook other side till crispy

place on plate on paper towels and keep warm in onion

while making them, liquid will accumulate in batter bowl, drain as you go
