Very ripe, red tomatoes or cherry tomatoes chopped into small pieces
Optional - 1 small can of chopped tomato pieces with juice (if tomatoes are not in season and you want to add more juice to the mixture)
Olive oil
Salt and pepper
Fresh chopped or grated clove of garlic (or approx.1/2 tsp garlic powder if you don't have fresh garlic - although who doesn't have fresh garlic???)
Dash of oregano flakes (optional)
Fresh basil leaves

Directions:
Directions:
Chop up the tomatoes into small pieces - add salt and pepper
Add small can of chopped tomatoes if choosing to add.
Add about 2-3 tablespoons of olive oil, garlic and dash of oregano if using.
Mix well. This can be left overnight to absorb flavours or used immediately.

Places slices of baguette on parchment paper on a cookie sheet. Drizzle a bit of olive oil on each piece and place under broiler to brown just slightly. Turn over and do the same. (1-2 minutes max!)
Once the bread is toasted on both sides, place a teaspoon full of bruschetta mix on each piece of bread.
Some people like to add a piece of basil on each piece, a sprinkle of parmesan or romano cheese or even some crumbled feta.
The toast will soften slightly with the tomato mixture so do not make the bruschetta too far ahead of serving (although the mix can be made a day or two ahead and the bread can be toasted a day ahead) Just assemble and enjoy!

In our family, I'm famous for burning toasted bread and garlic toast - probably because I'm also making lasagna, preparing the salad, setting the table and folding a load of laundry at the same time. Moral of the story - use one of the many timers I have in my kitchen drawer!
