1-2 packages flour tortillas
1 whole rotisserie chicken
1 large package shredded fiesta blend cheese
1 jar dill pickle relish
1 bag frozen hash browns
2 large cans red enchilada sauce

Directions:
Directions:
1. Preheat oven to 400 degrees.
2. Remove chicken from bones and shred.
3. Cover tortilla in enchilada sauce and fry on pan. Place in baking sheet.
4. Place shredded chicken, hash browns, cheese, and pickle relish down center of tortilla.
5. Roll tortilla like a burrito, leaving ends open.
6. Repeat steps 1-5 until baking sheet is full or chicken is gone.
7. Place in oven for 20 minutes or until edges of tortilla start to get crispy.
8. Eat more than you wanted until you can't eat any more.

One of my favorite meals of all time. Really fun to make as a family. I have lots of memories of making these with Mom and Dad around the holidays. I made them for Weldon's family and now they keep begging me to make them again.
