4 tablespoons butter
5 eggs
1/4 cup flour
1/2 teaspoon baking powder
1/8 teaspoon salt
2 cups shredded Monterey Jack or Cheddar cheese (about 8 ounces)
1 cup small-curd cottage cheese
1 (4 ounce) can diced green chiles
Dash of cayenne

Directions:

Preheat oven to 400 F. Melt butter in a 9-inch square baking pan.

In a large bowl, whisk eggs until well blended. Stir in flour, baking powder, salt and cayenne. Tip baking pan to coat bottom and sides; add melted butter to egg mixture. Add Monterey Jack cheese, cottage cheese, and chiles and blend well.

Pour mixture into buttered pan and bake for 15 minutes. Reduce oven temp to 350 F and bake 30-35 minutes longer, until top is lightly browned a knife inserted into center shows no evidence of uncooked egg. Let cool on a rack at least 10 minutes. Cut into 11/2-inch squares. Serve warm or at room temperature.
