1 Eggplant (peeled, slice and soak in salt water for 5 minutes)
Flour
Salt
Pepper
Parmesan cheese
Tomato Sauce
Butter
Onion

Directions:
Directions:
Dredge eggplant in flour, salt & pepper. Brown in skillet.
Put in casserole dish, with onion and parmesan cheese.
Pour tomato sauce over eggplant and onion.

Bake at 350º for 1 hour.

Grandma Evelyn had many wonderful old family recipes that were never written down, but handed down from grandmother, to mother, etc. Aunt Carolyn tried to get as many recipes recorded while sitting in Grandma's kitchen about 50 years ago. Aunt Carolyn made copies for me and I got a recipe box full of recipes as a Christmas gift. I still have that box and the recipes in Aunt Carolyn's handwriting. The recipe box is in tatters, the dividers long ago torn and gone, but the recipes remain, thanks to a forward thinking sister-in-law. I'm so glad she was able to capture these recipes that you find with the "Grandma Evelyn's" in front of title.
