2 small whole lemons
1 cup canola oil
1 cup water
2 Tbsp ground flax seed
3 cups gluten free flour blend
2 tsp. Xanthum Gum, if not in your flour blend
1 1/2 sugar
2 tsp baking soda
1 tbsp baking powder(double acting)
1 cup medium unsweetened coconut
1 cup dried cranberries
1/2 cup sunflower seeds

Directions:

Preheat oven to 300º ( convection) or 325º (regular)

Combine first 4 ingredients in blender and blend until smooth.

In mixer bowl combine remaining ingredients, add contents of blender adding more water if too thick.

Divide batter into 12 large paper cup lined muffin tin. Top with sugar and/or sunflower seeds.

Bake at 300º for 30 minutes or until toothpick inserted into middle of muffin comes out clean.
