1 3/4 cup flour
2 tsp. baking powder
1/4 tsp. salt
1/4 cup shortening, with 1 Tbsp. margarine included
3/4 cup sugar
1 egg
3/4 cup milk
1 tsp. vanilla
2 cups pitted cherries
1/2 cup chopped walnuts or pecans

Clear Red Sauce:
1/2 cup sugar
2 Tbsp. cornstarch
1 cup water
1 cup cherry juice
1/4 tsp. almond flavoring
red food coloring, if desired

Cake:
Sift flour, baking powder, and salt. Add shortening, sugar, egg, milk, and vanilla, using mixer on medium speed. Add cherries and nuts, stirring just to combine. Bake at 300º for 10 minutes. Raise temp to 325º and bake for 20 to 30 min. Use a shallow pan like a jelly roll pan. Serve with clear red sauce.

Clear Red Sauce:
In saucepan mix sugar and cornstarch. Gradually add water and cherry juice, heat till thickened. Add almond flavoring and food coloring.
