Beets

1 1/2 cups water
1 1/2 tsp. salt
4 cups vinegar
1 cup sugar
3 tbsp. pickling spice (in a bag)

Directions:
Directions:
Boil beats in skin and leave stems 1 to 2 inches. Takes about 1 hour check to see if tender with a fork should go in easy.
Dump cooked beets into cold water to peel.
Cut into wedges and pack in jars ( 2 or 3 Quart jars)

Boil all other ingredients together for 5 minutes.
Pour over beets and Seal.
Can be enjoyed right away, your Dad likes them better when they have cooled in fridge for awhile.

A lady I know Mrs. Willard told me to cook the beets by roasting them in large roast pan in the oven. She says they cook the same but there is no mess like when the boil over on top of the stove like they always do. I have not tried to cook them this way yet but I'm going to try it next summer 2017.
