Filling for 12 Cannoli ( I buy the shells at Meijer in the Italian Isle--Alessi Brand

32 oz container of Ricotta Cheese (whole milk)
3/4 cup Powered Sugar (or more if you like them sweeter)
1/2 to 1 Cup Heavy Cream--I use one cup because I love whipped cream (and I don't sweeten it since the I have already sweetened the Ricotta)
1 to 1 1/2 tsps vanilla
6 oz mini semi sweet chocolate chips (more or less---just to your liking)

Beat together Ricotta cheese and powdered sugar. Beat the one cup of heavy cream until stiff peaks are formed then fold into ricotta cheese/powdered sugar mixture, add vanilla. Stir in Chocolate chips. Put mixture in large plastic ziplock bag and snip off 1 corner. Pipe mixture into cannoli shells one end at a time. You can dip the ends into more chocolate chips or crushed pistachios. Keep refrigerated until about a half hour before serving.
