2 c. cider vinegar
1 1/2 pounds (approx. 4) tart apples, peeled, cored & chopped
2 mangoes, chopped
1 1/2 c. brown sugar
1/2 oz. crushed red pepper (or to taste)
1/2 c. raisins
1/2 lb. crystallized ginger
1/2 lb. crystallized lemon peel (you can make your own from 4 lemons & 1/2 c. sugar)
2 cloves garlic, chopped fine
1 T. salt
1 T. mustard seed
1 T. ground ginger

Directions:
Directions:
In a large saucepan combine all ingredients except for the mango & boil. Once it comes to a boil, reduce heat, add mango & simmer until all fruits & vegetables are tender, approx. 20 to 30 minutes. Stir often to prevent scorching. Serve with chicken, port or turkey. Keep refrigerated.
