6 egg yolks, at room temperature
6 egg whites
1/2 cup granulated sugar
2 cups (16-ounces) or 1 container (454 g) of mascarpone
1 package of Savoiardi ladyfingers
1 1/2 cups Italian espresso coffee, cooled
2 tablespoons of any kind of coffee or cocoa liqueur)
1/4 cup cocoa powder for sprinkling
2 ounces dark or semi-sweet chocolate, shaved, for the top (or just sprinkle cocoa powder)

Brew coffee and allow to cool to room temperature.
In a mixer, whisk egg yolks and 1/4 cup of sugar until pale, doubled in volume, about 3-4 minutes.
Mix in marscarpone a little bit at a time.
In another large bowl, beat egg whites and remaining 1/4 cup sugar until stiff, glossy peaks form.
Fold egg whites into mascarpone mixture. (I use a hand whisk to do this so the mixture remains light and fluffy). Set aside.
Add 2 tablespoons coffee or cocoa liqueur to the cooled coffee.
Dip Savoiardi ladyfingers quickly into the coffee (don't hold them in the coffee for more than a few seconds or they will fall apart). Once the biscuit is dipped in the liquid, arrange in a layer on the bottom of a 9x13-inch glass casserole or foil pan.
When you have a layer of cookies at the bottom of your container, pour half the mascarpone mixture over the top of the cookies and spread. Repeat with another layer of dipped cookies and then another layer of mascarpone mix.
Spread a layer of whipped cream or Cool whip over the top to finish off. Sprinkle with a light dusting of cocoa powder and/or cover with chocolate shavings *(use a potato peeler on the side of a cold chocolate bar to make shavings).

This is a great dessert to take to a potluck party or to make ahead for a dinner party. It is best if made the day before because it holds its shape better. Can also be frozen. Delicious!
PS - Tiramisu means 'pick me up!' It is an energy booster because of the eggs, cream and calories!
