1 lb (or more) of lean ground beef
1/2 lb of lean ground porc
1/2 lb of ground veal (optional)
Salt, pepper,
Handful of grated romano cheese
Approx. 1 cup of dry bread crumbs
2 eggs
2 slices of bread (day old sliced bread is fine) broken into pieces and soaked in milk
1/4 tsp. garlic salt (if desired)
finely chopped parsley (if desired)

Directions:

Combine all the ground meat in a large bowl. Add salt and pepper and garlic salt (if desired).
Add 2 eggs and approx 1 cup of dry bread crumbs to the meat.
Add approx. 1/2 cup of romano cheese to the mix.
Break up 2 or 3 slices of white bread and soak for a few minutes with milk.
Squeeze the soaked bread to drain the milk. Add mushy bread to the meat mixture. Add chopped parsley if desired.
Mix everything together.
Take a small handful of meat and form into a meatball, making sure to press the meat well so the meatball is firm. (The size of the balls is entirely personal preference!!) Try to make all the meatballs approximately the same size so they all cook consistently.
Place on parchment paper (or foil) on a cookie sheet and bake in oven at 375 for approx. 30 minutes. You can turn them once to try to brown them all over. Once the meatballs are browned, drop them in the tomato sauce to finish cooking with the sauce. Once cooked, grab a whole baguette, stand at the stove and dip the baguette in the fresh sauce while fishing for the meatballs! Share if you are feeling generous.

As I child, I remember my Godmother's meatballs which she would serve in a beautiful silver casserole every year when they hosted their annual Christmas party. They were so soft. Recently, I remembered that she used bread soaked in milk to make the meatballs soft and tender. So I tried it and it worked.
Great on a fresh baguette with extra tomato sauce and a little melted mozza!
