Lump of butter the size of an egg (1/4 cup)
2 eggs
One dessert spoon of vanilla flavoring (1 tsp)
Enough cream to finish filling the teacup (See directions)
One teacup of sugar (1 cup)
One teacup self rising flour (1 cup)
One teacup huckleberries (1 cup)

Directions:

Melt butter. Pour into a teacup. Add two eggs and vanilla flavoring. Finish filling the teacup with cream (about 1/4 cup). Mix sugar and flour. Add liquids. Fold in huckleberries. Bake at 350º in a greased skillet (spider) until center springs back when touched.

We worked with Nanny in the field on the farm and then we would take a break to eat huckleberries. We were so hot and tired that we called it the "lifesaver tree". We would pick extra huckleberries to make a skillet cake to eat that night. She left us with many, many happy memories!
