Perogy Dough:
5 Cups of Flour
1/2 Cup instant potatoes
Mix the two together, make a well in the middle and add:
1/2 cup oil
2 cups warm (potato) water
2 Tbspns of salt

Perogy Filling:
- 2 tbspn butter
- block of cheese
- 5 lb. bag of red potatoes

Perogy Dough:
- Mix altogether into a large bowl - grease hands with oil and pat over the ball
- Cover and let sit at least one hour or even over night
- Divide ball of dough in half, roll out and cut perogy shapes (with glass or cookie cutter)
- Put a tsp of pie filling in round and seal perogies with your fingers and with a fork

Perogy Filling:
- Boil Potatoes in salted water until cooked
* Potato water, save water when boiling potatoes for filling of perogy and use as liquid making the dough (Grandma Joan trick for flavour)
- Add butter and a block of shredded cheese (old)
- Mix together with blender of potato masher, let sit to cool
* Add more or less cheese depending on taste preference
