2 eggs
2/3 cup vegetable oil
2 teaspoons vanilla
1 teaspoon grated lemon rind
3/4 cup sugar
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt

Directions:
Directions:
Heat oven 400 degrees. Beat eggs with fork. Stir in oil, vanilla, and rind. Blend in sugar until mixture thickens. Stir together flour, baking powder, and salt. Blend in. Drop dough by teaspoon about 2 inches apart on ungreased baking sheet. Flatten with greased bottom of glass dipped in sugar.

Bake 8-10 minutes or until delicate brown. Remove from baking sheet immediately.
