1 box Jiffy corn muffix mix
1 egg
8 oz sour cream
1 can creamed corn
1 can red enchilada sauce
1 small onion chopped
2 cloves garlic minced
1 pack taco seasoning
1 ½ lb ground beef
1 c. shredded sharp cheddar cheese
1 c . shredded Monterey Jack cheese

Directions:
Directions:
Prepare cornbread base ( corn muffin mix, egg, sour cream, creamed corn) pour into greased cast iron skillet or glass baking dish if no cast iron skillet.

Bake at 400 degrees until golden brown.

Prepare taco meat (brown ground beef, add onions, garlic- cook until onions are transparent – stir in taco seasoning until blended into meat mixture) – drain meat mixture and set aside.

Poke entire surface of cooked cornbread base with fork and pour enchilada sauce over the cornbread. Add the meat mixture and top with shredded cheese. – bake approx. 20 minutes until cheese is melted and begins to slightly brown.

Sprinkle with chopped fresh cilantro ( optional)
