-1 stick butter
-2 lbs carrots peeled and cut into 1/2 in pieces
-3/4 cup whiskey (I like jack daniels honey)
-3/4 cup packed brown sugar
-salt and pepper to taste
-1 thyme sprig (I use a couple dashes of dried thyme on top)

1. Melt 1/2 stuck of butter in a large skillet (With lid) over high heat. Add half the carrots...
2. and stir them around to Brown them quickly.
3. remove them to a clean plate and repeat with the remaining carrots.
4. pour the whiskey into the skillet, take care if your're cooking over an open flame. Let the whiskey Bubble Up and cook for 3 minutes or until slightly reduced.
5. reduce the heat to medium-low and Add the other half stick of butter stirring until melted.
6. stir in the brown sugar.
7. Then add the carrots.
8. reduce the heat to low, place the lid on the skillet, and cook for 5 minutes.
9. remove the lid and cook for another 5 minutes. Sprinkle with salt and pepper to taste. Be sure to add enough salt to offset the sweetness.
10. serve with thyme sprig or sprinkle chopped On Top.
