2 cups sugar
4 eggs
1 cup oil
3 small jars strained carrots
1 cup crushed pineapple, drained
2 cups flour
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1 tsp. vanilla
1 cup chopped nuts
Icing:
1, 8-oz. cream cheese, room temperature
1/2 cup butter, softened
1 box confectionary sugar
2 tsp. vanilla

Directions:

Beat eggs with sugar. Add oil, vanilla, and strained carrots, blend. Sift together the flour, baking soda, salt, and cinnamon. Add this to the batter, blending with mixer. Stir in the pineapple and nuts. Pour into 9x12 greased and floured cake pan. Bake 375º for 45 minutes.
Cool cake before frosting. To make icing, beat together butter and cream cheese. On low, beat in confectionary sugar and vanilla. Then beat on high speed until light.
