Makes two 13"x9" pans
4 lbs ground beef
1 medium onion
2 lg garlic cloves, minced
2 links Italian Sausage pepperoni)
4 tsp salt
1 tsp pepper
2 tsps. sugar
3 tbsp Italian seasonings
2 lg cans whole tomatoes
2 lg cans tomato paste
2 16oz packages lasagna noodles: cooked & drained
2 lg cartons cottage cheese (or ricotta cheese)
4 pkgs shredded mozzarella cheese
2 lg pkgs swiss cheese slices
parsley flakes

Brown meat & drain fat
add salt, pepper, garlic & onion - stir
add tomatoes, tomato paste - stir
add Italian seasonings - stir
Bring to a boil, reduce heat & simmer - uncovered for 2 hrs.
(Maintain sauce level with water as needed)

Butter both 13"x9" pans and arrange in order:

Lasagna noodles (approx. 4 across - overlap)
Sauce (mostly meat)
Lasagna noodles
Spread 1 lg carton cottage cheese (divided between two pans)
Place sliced swiss cheese over top
Sprinkle parsley flakes over top
Arrange pepperoni on top
Lasagna noodles again
Remaining meat sauce over noodles
Sprinkle 1 pkg shredded mozzarella cheese over top (1 pkg per pan)
Sprinkle parmesan cheese over top of this

Bake uncovered at 350º for approx. 45 minutes or until cheese is lightly browned. Allow to stand at least 10 minutes before cutting

Due to my dislike of chunks of tomatoes, I personally use tomato sauce. Also, instead of using all ground beef I use 2 lbs ground chuck and 2 lbs Italian sausage (1 mild & 1 hot). I will also add a few slices of pepperoni to the sauce while simmering....Another substitution is ALL GOOD QUALITY mozzarella, no swiss....... This was a great birthday party hit!
