3 eggs
2 cups sugar
1 cup vegetable oil
2 cups raw grated peeled zucchini
3 tsp. vanilla
3 cups flour
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
3 teaspoons cinnamon
1 cup nuts (optional)

Directions:
Directions:
Beat the eggs until light and foamy. Add the sugar, oil. zucchini, and vanilla and mix lightly but well. Combine the flour, salt, soda, baking powder, and cinnamon and then add to the egg-zucchini mixture. Stir until well blended. Add nuts. Pour into 2 9"x5"x3" loaf pans. Bake at 350º for 1 hour.
