3 Tbl Bacon Grease/Canola Oil
2 Tbl Unsalted Butter
3 Anaheim Chilies, roasted, peeled, chopped
2 Red bell Peppers, diced
2 Jalapeņos, minced
2 Yellow onions, med/large, Minced
1 Head garlic, 10-12 cloves, minced
1 lb boneless chuck, 1/4 inch cubes
2 lb ground beef, coarse grind
1 lb bulk Italian sausage
2 tbl chili powder
2 tsp cayenne pepper
2 tsp ground coriander
2 tsp ground cumin
2 tsp granulated garlic
2 tsp granulated onion
2 tsp hot paprika
2 tsp salt
2 tsp black pepper
2 cups tomato sauce
1 cup tomato paste
12 oz mexican dark beer
1 cup chicken stock
2 15.5oz dark kidney beans with juice
2 15.5 oz pinto beans with juice

Directions:
Directions:
Add bacon grease/oil and butter to large stockpot over high heat. Add anaheim peppers, poblano chilies, red peppers,jalapeņos and onions. Cook until caramelized, about 5 min. Add garlic and saute 1 min longer. Add chuck brown about 4 min. Add ground beef and sausage and brown stirring gently trying not to break up ground beef too much. Cook until the meat is browned and cooked through, 7-10 min. Add spices; cook about 1 minute. Add tomato sauce and paste and stir to caramelize, about 2 min. Stir in beer and stock. Add kidney beans and pinto beans lower heat to simmer about 2 hours.
