2 1/2 cups flour
1 T baking soda
1 t ground ginger
1/2 t salt
1/2 cup chopped candied ginger
1 cup packed dark brown sugar
1/2 cup shortening at room temperature
1/2 cup molasses
2 t instant coffee dissolved in 1 T hot water
1 large egg
1 1/2 t vanilla extract

Directions:
Directions:
Whisk first 5 ingredients into a medium bowl. Beat together brown sugar, shortening and molasses until well blended. Beat in coffee mixture, egg and vanilla. Combine wet and dry ingredients. Cover and chill for 4 hours.
Preheat oven to 350º. Grease two large cookie sheets. Form dough into 1 1/4 inch balls and place on sheet 2" apart. bake for 12 minutes, or until cracked on top but center is softly set.

A great Christmas cookie! Don't leave out the chopped candied ginger, it is what makes this cookie wonderful.
