6 qts. water

2 T sugar
32 stalks asparagus, small to medium, washed and trimmed
2 lemons, juiced
2 T white wine vinegar
1 tsp honey
2 T smooth Dijon mustard
4 T olive oil

Directions:
Directions:
Cut off bottoms of asparagus. Add salt to water, then sugar. Add enough ice to make very cold. Plunge asparagus into it before cooking. Then put into boiling water and cook 2-3 minutes. Use slotted spoon and put back in ice bath. Allow to sit in ice a few minutes, swirling gently to assure complete cooling.

Dry stalks completely. Transfer to a large plate or platter lined with kitchen towel and refrigerate.

In medium bowl, combine lemon juice, vinegar, honey and mustard. Stir to blend. Whisk in olive oil in even steady stream. When all the oil is integrated, taste and adjust seasoning if needed. Toss asparagus in dressing and arrange on plate to serve.
