2 cups buttermilk
6 tablespoons vegetable oil
1 3/4 cups flour
2 1/4 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 tablespoon sugar

Directions:

Combine liquid ingredients and dry ingredients separately. Mix together until smooth. Let batter rest for 10 minutes. Cook on preheated skillet or griddle. Flip when top has bubbles and bottom is cooked.

When we lived in the Houston area, the 59 Diner was famous for it's pancakes. These are really good. Add blueberries, pecans, banana slices or strawberries as desired.
