1, 9-inch pastry shell, baked or graham cracker crumb crust
1, 8-oz. package cream cheese, softened
1, 14-oz. can sweetened condensed milk
3/4 cup cold water
1, 4-oz. serving size package instant butterscotch pudding mix
1 cup (1/2 pint) whipping cream
Directions:
Directions:
In large bowl, beat cheese until fluffy. Gradually beat in sweetened condensed milk until smooth. On low speed, beat in water and pudding mix until smooth. Whip cream. Fold into pudding mixture. Pour into prepared baked pastry shell. Chill at least two hours or until set.
***Note variations to this recipe:
Chocolate cheese pie: Substitute instant chocolate pudding for butterscotch.
Add 1/4 cup unsweetened cocoa with pudding mix. Proceed as above.
Coconut Cheese Pie: Substitute instant coconut cream pudding for butterscotch. Fold in 1/2 cup coconut with whipped cream. Proceed as above.
Vanilla Nut Cheese Pie: Substitute instant vanilla pudding for butterscotch. Fold in 3/4 cup chopped toasted nuts with whipped cream. Proceed as above.

I liked both the butterscotch (and I'm not normally a fan of butterscotch) and coconut Cheese varieties ..haven't tried the others. Was given this recipe years ago!! Could probably substitute whipped topping for whipped cream but would have to adjust volume added to equal volume of cream once whipped.
