clean mason jars
canner
boiling water

Directions:
Directions:
1. Use fresh ripe tomatoes
2. Blanch tomatoes to peel
3. Remove core, skin, trim off any green spots. Cut tomatoes into quarters or leave whole and drop into hot jars.
4. Press tomatoes in jar and let juices fill up spaces. Leave 1/2 inch of space in the jars. Add 1 tsp salt on top.
5. Run knife between tomatoes and jar to remove air. Wipe top and treads of jar. Put lid on jar. Screw band light. Put jars in canner of hot—not boiling—water to cover.
6. Process pints for 35 minutes, quarts for 45 minutes at boiling. Take cans from canner. Let stand about 12 hours then take off bands. If dome is down or stays down when pressed, jar is sealed.
