5 or 6 corn tortillas
4 eggs
Grated or cubed cheese (cheddar or monterey jack)
Salsa

Directions:
Heat a little bit of oil or non-stick cooking spray in frying pan.
Cut or tear tortillas into quarters. When pan is heated, add tortillas and brown on both sides until crisp. Drain on paper towels.Sprinkle tortillas with a little bit of salt.

Beat the eggs together and add the cheese. Lower the heat in the pan & add egg mixture to tortillas. Cook until eggs are set and cheese is melted. Add salsa to egg mixture while still hot in the pan, and serve.
