1 ¾ c. flour
2 tsp sugar
1 ½ tsp baking powder
1 tsp baking soda
1 tsp salt
2 c buttermilk
2 large eggs
¼ c butter, melted
Directions:
Directions:
Stir together flour and next 4 ingredients in a large bowl. Whisk together buttermilk and eggs; gradually stir into flour mixture. Gently stir in butter. Batter will be lumpy. Do not over-beat! Let stand for 5 minutes.

Pour about ¼ cup batter for each pancake onto a hot (350 degrees) buttered griddle. Cook pancakes 3 to 4 minutes or until tops are covered with bubbles and edges look dry and cooked.

Turn and cook 3 to 4 minutes or until golden brown. Place pancakes in a single layer on a baking sheet, and keep warm in a 200 degree oven for up to 30 minutes.

My little sister Jane was offered pancakes one day while visiting a friend's house. The pancakes being served were the light and fluffy kind, which she had never seen before. Her idea of a pancake was the Grandpa Mack Bishop crepe-like version we loved and often had at our house for breakfast, lunch, or supper. We loved slathering them with butter (or oleo in those days), sprinkling them with sugar, and rolling them up.

Jane still prefers the crepe-like French pancakes, but those who go for "light and airy" will enjoy this version.
