2 Cups Flour
1 tsp baking soda
1 cup oatmeal
3/4 cup butter
3/4 cup granulated sugar
3/4 cup light brown sugar
1 tsp vanilla
2 large eggs
12 ounces (2 cups) chocolate chips (I like to mix half milk and half semi sweet)

Directions:

Preheat oven to 325ºF
1) Mix flour, baking soda and oatmeal in one bowl.
2) Beat butter, sugars and vanilla in a large bowl. Add eggs.
3) Add dry mixture from step one slowly.
4) Stir in chocolate chips.
5) Scoop golf ball size dough onto cookie sheets.
6) Bake at 325º F for 8-10 minutes, depending on soft/crispy preference.

Craig is one of the best bakers I know. I love these cookies but they would give my husband a quick trip to the hospital. One day I wanted some oatmeal chocolate chip cookies so I tried replacing oatmeal with peanut butter since I had heard it is a moist alternative and viola, it worked. I have the English hooked on them now.
