3 Cups Flour
1 1/2 Cups Cold Lard
¾ to 1 Teaspoon Salt
1 Egg
5 Tablespoons VERY COLD Water
1 Tablespoon Vinegar

Directions:
Directions:
In a bowl, sift flour and salt together. Add lard, and work together until very fine using a fork or pastry blender to the size of peas. In a small cup beat egg with a fork. Add water and vinegar – whisk until well blended.
Make a little well in the flour mixture, pour in liquids and blend.
Shape into a ball and let rest (today we would refrigerate) for 1 hour. Cut ball into 2 – roll out on a floured surface. Makes 2 – 8 inch pie crusts or 1 deep dish pie crust.

William Henry Duclon was born on March 27, 1845, in Alexandria Bay, New York, the child of Claudius and Catherine Sophia. He married Julia Davenport on May 2, 1867, in Mackinac County, Michigan. They had eight children and were stationed at the Eagle Bluff Lighthouse in Blossomberg. Their son, Frank, married Gustie Nelson in 1905. Their daughter, Jessie, was born the same year. In 1908 they divorced; Gustie and Jessie moved to Cedar River MI. Gustie was a sturdy woman whose life history could fill the pages of a book! She was a cook on a passenger steamer, she was the cook at the CCC Camp Wells and she cooked at a local logging camp. She raised 2 daughters without a husband, living in a little rustic cabin in the woods with no electricity or water. She played a little guitar and sang the songs she wrote about life in the logging camps, the CCC's, and on the Great Lakes.
