5 gal. Apple cider
5# seedless raisins
1 package dry yeast dissolved in 1/4 cup water
10# sugar

Directions:
Put cider in crock or plastic tub. Add the raisins and yeast. Stir well. Cover with thin cloth to keep out dirt and fruit flies. Let stand at room temp for 1 week stirring once daily. Strain through cloth or filter paper.add 10# sugar and stir till sugar is dissolved. Cover with cloth and let stand 24 hours. Remove scum. Pour into 5 gal carboy. Fill with water to within 1/2" of top. ( I use cider). Put bubbler in carboy. Set in cool dark place to ferment without disturbance. Add water to keep carboy full at all times. Fermentation will continue for about 9 months. Carefully drawoff into clean bottles being careful not to disturb the dregs in the bottom. Is ready to enjoy now but will improve if left several months more. It's better to put vodka in the bubbler rather than water because nothing grows in vodka.
