4 cups flour
1/2 tsp. salt
2 ¼ tsp. baking soda
1 ¼ tsp. ground ginger
2 ¼ tsp. ground cloves
2 ¼ tsp. ground cinnamon
1 1/2 cups vegetable oil (or 2 sticks unsalted butter, room temp.)
2 ½ cups granulated sugar, divided into 2 cups and ½ cup.
½ cup unsulfured dark molasses
2 large eggs

Directions:

Whisk together dry ingredients. Beat butter and sugar ‘til light and fluffy. Beat in molasses. Beat in eggs one at a time. Gradually mix in flour mixture.
Roll dough into walnut size balls and then roll in ½ cup sugar. Skip this step if cookies will be frosted. Flatten with bottom of glass.
Bake at 375º for 8-10 minutes on greased cookie sheets.

Molasses cookies always makes me think of Aunt Dorothy, they were one of her specialties. Betty's recipe calls for oil but you can use butter as well. Her's doesn't call for ground ginger and cloves either but they taste even better with.
