1 stick soft butter
1 lemon zest and juice
kosher salt
black pepper
1 large bunch thyme
1 whole lemon, quartered
1 Spanish onion, quartered
1 head garlic, halved crosswise

Directions:
Directions:
Melt butter, add lemon zest, juice, salt and pepper and 1 tsp thyme leaves.

Remove giblets, wash turkey inside and out and pat dry. Liberally salt inside. Stuff cavity with rest of thyme, lemon quarters, onion and garlic.

Brush outside with butter mixture. Put large globs under loosened skin and roll around. Sprinkle outside with salt and pepper. Tie legs and tail together, tuck wings under bodt.

Roast about 2 1/2 hours or until juices are clear when you cut between leg and thigh. Remove to cutting board, cover with foil and rest 20 minutes before slicing.
