10 Med cucumbers washed ( long and small around work best)
8 cups sugar
2 tbsp. pickling spice (put in bag or secure in cheese cloth)
5 tsp. salt
4 cups vinegar
a few drops of green food colouring - optional

Directions:
Directions:
Put cucumber in large pan or roast pan cover with boiling water.
Each day drain ( I rinse cucumbers off with water) and cover again with boiling water DO THIS FOR 5 DAYS

On the fifth day slice cucumbers ( if the are hollow I usually discard seeds and cut up into pieces, if really soft or mushy throw away and start over with new cucumbers)

Boil the sugar, vinegar, salt, pickling spices and green food colouring for 5 minutes.
Pour hot brine over cucumbers ( put a plate on top of cucumbers to keep them covered and down in juice)
Let sit 2 days
Drain brine from cucumbers and bring back to boil.
Jar cucumbers in sterilized jars cover with boiled brine and sea

If you have any extra jars your Uncle Greg and Aunt Bonnie love these pickles, Aunt Bonnie once told that when I gave them a jar they ration them out only allowed four pickles each meal so they will last longer LOL
