My Grandma's Thunder Cake Recipe

Cream together, one at a time:
1 c. shortening
1 3/4 c. granulated sugar
1 tsp. vanilla
3 eggs, separated (Blend yolks in. Beat whites until stiff, then fold in).
1 c. cold water
1/3 c. pureed tomatoes

Sift together:
2 1/2 c. cake flour
1/2 c. dry baking cocoa
1 1/2 tsp. baking soda
1 tsp. salt

Directions:
Directions:
Preheat oven to 350º. Grease and four two 8 1/2-inch round cake pans.

Mix dry mixture into creamy mixture.

Pour into prepared cake pans and bake for 35-40 mins.

Cool in pans for 10 minutes then turn out onto cooling racks. Cool completely.

Frost with chocolate frosting and top with strawberries.

I remember Sophia as a preschooler bringing this recipe home so excited to make this special cake. She couldn't believe that the secret ingredient could transform into a tasty dessert! We made it together on a snow day, All these years later, Bianca also received a copy from her kindergarten teacher. It comes from a book by Patricia Polacco called Thunder Cake.
