2 dry yeast packages in 1 cup warm water with a tsp of sugar
2 1/2 sticks of butter
1 1/3 cup sugar
2 tsp salt
2 cups warm mashed potatoes (don't use cold potatoes)
2 cups scalded milk (watch closely so you don't burn milk)
1/2 tsp mace
4 beaten eggs + 1 egg and 2 yolks for glaze

Put yeast, warm water and sugar in bowl and mix to dissolve. Use stainless steel bowl if you have, dough will rise faster.
Next combine room temp butter with sugar and salt
Mix in warm mashed potatoes.
Mix in scalded milk and mace.
Let cool to room temp.
Mix in beaten eggs.
Mix in yeast mixture.
Add flour, start with 8 cups and add more if too sticky
Place in a bowl with a lip and set in a warm place for dough to rise. Use a large enough bowl for dough to rise (double in size or better) Approx 2 hrs.
Punch down dough and cover, refrigerate over night.
Next morning by 7 or 8am the dough should have risen over night.
Punch down a second time and let it rise again in the fridge.(At least an hour or so)
Cut dough into 4 portions.
Use a portion of the dough at a time and keep the rest refrigerated
Roll out dough to 1/4" on a floured bread board. Cut into 4-5" squares. Cut each square in half diagonally to make two triangles..
Roll up each triangle from long end to point and curve slightly to make crescent shape.
Place rolls on well greased cookie sheets. (Don't use butter, use shortening as butter will cause the bottoms to burn)-
Brush with glaze of one egg and two yokes beaten.
Sprinkle with poppy seed and salt.
Put in warm place to rise again before baking. Rolls should have doubled in size or more.
Bake at 325º for 18-20 minutes or until lightly golden on edges.

Aunt Ann was the keeper of the flame after Grandma Stepka and always had these for our Thanksgiving gathering. Her daughter, cousin Lori has kept the tradition going strong and produces these gems for holidays and special occasions.
Same dough can be used for kolaches.
