2 C very rip pureed bananas (approx. 6 bananas--although I have found that if you increase it to 3 C it makes for sweeter bread and makes an extra banana bread loaf)
2 1/2 C dark brown sugar
1/2 C oil (may substitute melted, unsalted butter)
4 eggs
2 tsp vanilla (I love vanilla so I always add an extra tsp)
1 tsp cinnamon
2 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp salt
3 1/4 C flour
1 C Coca-Cola (I used Dr. Pepper--I prefer the flavor of Dr. Pepper better)
1 C chopped pecans (optional)

Preheat oven to 300º

Spray 2 9x5 inch loaf pans with non-stick cooking spray. (I also dust them with cinnamon sugar afterward)

Using your food processor, puree the bananas, then remove the puree to another bowl and set aside.

No need to clean the work bowl of your food processor, just add together and blend well the sugar, oil, eggs, and vanilla.

Takes about 1 minute.

Measure and mix together, in a separate bowl, all the dry ingredients except the nuts.

Return banana puree to processor work bowl.

Add dry ingredients and blend, pouring in the coca cola (or Dr. Pepper) as mixture is blending together. Blend until smooth, about 1 minute.

Blend in nuts by hand.

Divide mixture between 2 (or 3) loaf pans.

Place loaf pans on a baking sheet in the oven.

Bakr for 1 hour and 20 minutes or until loaves test done in the middle with a toothpick.

Let cool about 10-15 minutes to let the loaves sweat in the pans and turn them out of pans to finish cooling. These loaves keep well or can be frozen.
