6 med. potatoes
Water
4 stalks of celery
1 bunch of radishes
1 med. onion
2 c. mayonnaise (Best Foods or Hellman's)
1/2 tsp. salt
4 hard-boiled eggs
1 (10.5-oz.) can black olives, drained

Directions:
Directions:
Peel potatoes. Place whole-peeled potatoes into a large pot and cover with water. Boil for approximately 1 hour (al dente- do not over cook). Drain. Cut potatoes into bite sized pieces- set aside.

Chop celery, radishes and onion. Mix with mayonnaise and salt in a large bowl. Add potatoes to the mayonnaise mixture. Chop eggs and olives and add to mayonnaise mixture. Stir until well blended. Chill 4 to 5 hours or overnight.
