1 hoagie roll per person (I prefer french bread rolls)
2 pkgs.swiss cheese (or cheese of your choice)
2 pkgs.hard salami (or meat of your choice)
2 med. green peppers
2 med. onions (your choice)
3-4 med. tomatoes (I prefer Roma)
1 can ripe olives
olive oil (extra virgin)
aluminum foil (heavy duty is best)
salt & pepper

Cut each hoagie roll in half length wise for a sandwich. Cut salami into slices & then in half. Cut cheese length wise in half. Cut tomatoes in 1/2 & into thin slices. Cut green peppers into thin strips. Cut onion in half & cut into thin slices. Cut olives into 1/4's. Aluminum Foil is pulled out & cut off at about 6". (Use one piece of foil for every sandwich you make).
Open Hoagie Roll, spread a generous amount of Oil on each slice of bread. Begin layering ingred. onto one slice of your roll in this order (fill the whole piece of bread with each ingredient) :
cheese, meat, tomato, onion, green pepper, ripe olive, salt & pepper (generously).
Cover the other piece of roll & wrap in the aluminum foil.

If you make the sandwiches ahead & put them in the frig. They are WONDERFUL. Tastes best when they've had time to sit and mix flavors together!!! This is the recipe that Mom (Grandma) remembers from when she was growing up in Maine.
