1 box yellow cake mix without pudding
20 oz. crushed pineapple
1 cup sugar
6 oz. package vanilla pudding mix, not instant
3 oz. container frozen whipped topping, thawed
3/4 cup flaked coconut
Directions:
Directions:
Prepare cake by package directions. Spoon batter into a greased 9 x 13 pan. (you really do not want more than 3/8 to 1/2 inch of batter in pan. Use the rest for cupcakes) Bake at 350º until cake is done, about 20 to 30 minutes. Meanwhile, combined undrained pineapple and sugar; heat and stir until sugar dissolves.
Remove cake from oven and using a toothpick, punch holes all over surface of cake. Ladle pineapple mixture over cake. Cook pudding according to package. When it is thick, spoon over pineapple mixture.
Cool cake and spread top with thawed whipped topping and a generous sprinkling of coconut. Allow to stand overnight before serving.
