2 c. all purpose flour
11/2 tsp. baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
2 large eggs
1 cup sugar
1/2 canola oil
1 cup canned pumpkin
1 tsp vanilla extract
3/4 c. butterscotch chips
1 c. semisweet chocolate chips (mini)

1. Preheat over to 325 degrees. Line baking sheets with parchment paper and butter/grease the parchment paper.
2. In a large bowl of a mixer beat the eggs and sugar until a light yellow color.
3. Slowly add the oil, pumpkin, and vanilla
4. add the flour mixture with the baking powder and baking soda to the wet ingredients
5. with a rubber spatula gently fold in the butterscotch and chocolate chips
6. Use a 1/4 cup measuring cup to distribute dough on parchment paper. About 6 cookies per sheet
7. Bake cookies until lightly golden around the edges. About 16 minutes.
