2 c sugar
2 c flour
2 tsp. baking soda
2 tsp cinnamon
1/4 tsp salt
4 eggs
3 C grated carrots
1 1/2 c corn oil

Cream Cheese Icing
1 box confectioners sugar
1 8 oz, cream cheese
1/2 stick butter
2 tsp vanilla
1/2 c chopped pecans

Directions:
Directions:
Sift together first 5 ingredients and then add eggs and carrots, then oil, Put mixture in 3 greased and floured cake pans. Bake 350 for 30 min.

To make icing, beat first 4 ingredients.

When cake has been cooled, frost with cream cheese icing and sprinkle pecans on top and or sides.
