2 tablespoon oil
1 onion, chopped
1 cup chopped green pepper
2-3 cloves of garlic
1 cup cooked chicken, diced
1 cup ham, diced
1 cup smoked sausage, sliced
2 1/2 cups cubed tomatoes
2 1/2 cups chicken broth
1 cup uncooked rice
1 tablespoon parsley
1/2 teaspoon thyme
1 1/2 teaspoons salt
1/2 teaspoon Tabasco
cayenne to taste

Directions:
Directions:
Heat oil, saute peppers, onions and garlic. Add meat, Cook 5 minutes. Add remaining ingredients. Bring to a boil. Simmer 20 minutes or until rice is done.
